Where PLCs excel at making decisions based on sensors and data, IIoT Gateways excel at aggregating sensor data and passing it on to other sources (i.e. computers, databases, SCADA systems, the Cloud, cellphones, etc.), with various methods (i.e. Modbus, MQTT, Ethernet TCP/IP, JSON, etc.). The gateways may even have some logic capabilities but are generally not designed for high-speed machine or process control like PLCs are. Using the same technology that virtual conferencing software uses, access to the Internet is made either through your corporate network's Port 80 via either WiFi or ethernet, or through a cellular connection completely independent of your corporation's network. On the LAN side of the router, you may access PLCs, HMIs, webcams, etc. through a secure portal account just as you would access your virtual conferencing software account.
